Section 10A:31-10.11 - Security in the food service area(a) Written procedures shall be developed and implemented that govern the safe and secure storage of all cutlery items and hazardous kitchen utensils.(b) A designated staff person shall be accountable for maintaining an ongoing inventory of all cutlery items.
