Section 271-5.9 - Single-service articles(a) Single-service articles shall be stored in closed cartons or containers at least six inches above the floor or on easily movable dollies, skids, racks or open-ended pallets. Such storage shall protect the articles from contamination and shall not be located under exposed or unprotected sewer lines, or water lines that are leaking or on which condensed water has accumulated.(b) Single-service articles shall be handled in a manner that prevents contamination of surfaces that may come in contact with food.(c) Take-home containers (bags, cups, lids, etc.) provided in the display area for customer use shall be stored and dispensed in a sanitary manner.N.Y.
