Section 10-201.11 - Roof, Sidewalls, and Floors(A) TEMPORARY FOOD ESTABLISHMENTS may be operated without a roof and/ or sidewalls, if APPROVED.(B) Floors shall be maintained in a sanitary condition, dirt floors shall be covered with an APPROVED material, which will provide protection from splash and dust.Wis.
