Part 4655.8700 - DISHES AND UTENSILS REQUIREMENTS Dishes and utensils:
A. Only dishes and utensils with the original smooth finishes shall be used. Cracked, chipped, scratched, or permanently stained dishes, cups, or glasses or damaged, corroded, or open seamed utensils or cookware shall not be used. All tableware and cooking utensils shall be kept in enclosed storage compartments.B. Accessories for food appliances shall be provided with protective covers unless in enclosed storage.C. Enclosed lowerators for dishes are acceptable.D. Machine washed silverware (flatware) shall be washed in approved perforated containers, and stored with the handles up in the same containers.E.
