Sec. 83.
(a) Each center using vendor service shall have a written contract as follows: (1) The contract must describe the vendor's responsibilities.(2) The contract must assure that the vendor's food service business, food handlers, and all premises are inspected and approved by local health authorities.(b) Vendors must transport food items in easily sanitizable insulated containers that maintain potentially hazardous food at the temperature requirements of 410 IAC 7-24-187(a).(c) Upon receiving the food from the vendor, the center shall verify the temperature of the food with a metal stem type, numerically scaled thermometer that reads zero (0) degrees Fahrenheit to two hundred twenty (220) degrees Fahrenheit.(d) Correct food temperature and holding time shall be maintained until serving.(e) A record of potentially hazardous food temperatures taken shall be maintained at the child care center for one (1) year.(f) When potentially hazardous food temperature and holding time are not correct, the vendor shall be notified and food shall be immediately replaced.(g) If time is being used as a public health control, 410 IAC 7-24-193(a)(1) must be adhered to and procedures, time, and temperatures must be documented.Division of Family Resources; 470 IAC 3-4.7-83; filed Aug 11, 2003, 3:00 p.m.: 27 IR 141; readopted filed Oct 24, 2007, 11:25 a.m.: 20071121-IR-470070448RFA; readopted filed Aug 23, 2013, 3:36 p.m.: 20130918-IR-470130306RFAErrata filed 8/30/2017, 9:57 a.m.: 20170913-IR-470170397ACAReadopted filed 11/13/2019, 11:56 a.m.: 20191211-IR-470190490RFA
