(a) A livestock meat inspector shall be present on the premises of the livestock slaughter establishment during slaughter and shall supervise sanitary dressing procedures and perform post-mortem inspection of each carcass and part while the viscera is identified with the respective carcasses.(b) A processing inspector shall be present on the premises of a meat processing establishment when product is being formulated and when monitoring of weights or temperatures is required.Cal.
