Section 438 - Temperature(a) All ice cream mix and ice milk mix, after pasteurization, shall be maintained at a temperature below 50 degrees Fahrenheit until frozen. If the mix is a sterile product it shall be maintained below 50 degrees Fahrenheit after being opened.(b) Milk drink mix as defined by Section 38451 of the Food and Agricultural Code, after pasteurization, shall be maintained below 50 degrees Fahrenheit until frozen.
