Section 12610 - Cans Having Less Than 1 1/2 " Internal VacuumAfter the flip test representative samples of cans having less than 1 1/2" internal vacuum shall be submitted for laboratory examination.
(a) If laboratory findings on samples containing less than 1 1/2" internal vacuum indicate no spoilage, the remainder of the cans in the batch restrained containing less than 1 1/2" vacuum may be released for manufacturing purposes or disposed of directly through channels such as hotels or restaurants for immediate consumption. The canner must notify the Department of Public Health to whom this lot is sold. The material flip testing 1 1/2" or more vacuum and the normal cans may be released for retail trade.(b) If laboratory findings on samples containing less than 1 1/2" internal vacuum indicate the product not to be commercially sterile, all such cans are to be destroyed in the presence of the State Cannery Inspector.Cal.
