Section 3-201.16 - Wild Mushrooms
(A) Except as specified in ¶ (B) of this section, identification of mushroom species picked in the wild shall have a written buyer specification which is to remain on file in the FOOD ESTABLISHMENT for a minimum of 90 days from the date of sale or service. This written specification shall include: P
(1) Identification by the Latin binomial name with author and common name; P
(2) Identification in the fresh state; P
(3) The name of the individual making the identification; P and
(4) A statement of the individual's qualifications and training. P
(B)This section does not apply to:
(1)Cultivated wild mushroom species that are grown, harvested, and processed in an operation that is regulated by the FOOD regulatory agency that has jurisdiction over the operation; or
(2)Wild mushroom species if they are in PACKAGED form and are the product of a FOOD PROCESSING PLANT that is regulated by the FOOD regulatory agency that has jurisdiction over the plant.
