Section 170-297-7825 - Satellite kitchens(1) When a satellite kitchen or catering service is used to provide food to the child care program, the child care program must have on file a copy of the permit issued by the local health jurisdiction to the satellite kitchen or catering service.(2) When the satellite kitchen or catering service does not remain on-site during the food service the child care program must develop a system to record the temperature of perishable food once it arrives from a satellite kitchen or a catering service. The system must include:(a) The name and the temperature of the food;(b) The date and time the temperature was checked; and(c) The name and signature or recognized initials of the person who is checking and recording the food temperatures.(3) The child care program must have a written policy that describes: (a) How food will be handled once it is on-site;(b) What back-up system the program will use if the food does not arrive, not enough food arrives, or the food cannot be served; and(c) How records will be stored on-site for six months.Wash.
