Section 8:21-7.36 - Procedures for reconstituting dry frozen desserts mix
(a) The following procedures shall be followed when dry frozen dessert mix is reconstituted and used without repasteurization:
1. Only potable water shall be used to reconstitute dry mix.
2. The mixing container and equipment shall conform to the requirements set forth at 8:21-7.24, Construction and repair of containers and equipment.
3. The mixing container and equipment shall be cleaned and sanitized in accordance with the requirements set forth at 8:21-7.25, Cleaning and sanitizing of containers and equipment.
4. The temperature of the reconstituted mix shall be 45 degrees Fahrenheit or less prior to its use in the frozen desserts dispensing device. This shall be accomplished by:
i. Using chilled water which is 45 degrees Fahrenheit or less to reconstitute the dry mix; or
ii. Rapidly cooling the mixture without interruption to a temperature of 45 degrees Fahrenheit or less within two hours utilizing such methods as quick chilling refrigeration equipment or external water circulation.
5. The use of the hopper or reservoir of the frozen desserts dispensing device for the rapid cooling of reconstituted mix shall be prohibited.
6. The finished product shall meet the bacterial standards set forth at 8:21-7.28.
