Equipment and utensils used for the preparation, processing or otherwise handling of any product in the plant, shall be suitable for the purpose intended and shall be of such material and construction as will facilitate their thorough cleaning and insure cleanliness in the preparation and handling of products. In addition, surfaces which contact meat and/or meat products shall be nontoxic, corrosion-resistant, smooth, free from breaks, open seams, cracks, and chipped places. Stainless steel may be required where continued use and heavy corrosion occur. All equipment and utensils shall be maintained in a clean and sanitary condition; adequate washing vats, cleaning facilities and storage space shall be provided for this purpose. Trucks and receptacles used for handling inedible products shall be of similar construction and shall be conspicuously and distinctly marked and shall not be used in handling any edible products. Equipment and utensils used in the plant shall not be used outside the plant except under the conditions as may be approved by the Commissioner.
