Sec. 284.
(a) The temperature of the wash solution in spray-type warewashing machines that use hot water to sanitize may not be less than: (1) for a stationary rack, single temperature machine, one hundred sixty-five (165) degrees Fahrenheit;(2) for a stationary rack, dual temperature machine, one hundred fifty (150) degrees Fahrenheit;(3) for a single tank, conveyor, dual temperature machine, one hundred sixty (160) degrees Fahrenheit; or(4) for a multitank, conveyor, multitemperature machine, one hundred fifty (150) degrees Fahrenheit.(b) The temperature of the wash solution in spray-type warewashing machines that use chemicals to sanitize may be not less than one hundred twenty (120) degrees Fahrenheit.
