Sec. 32.
"Hand washing procedures" means vigorous washing of hands for at least fifteen (15) seconds using soap and running water from an approved water supply, followed by rinsing of hands under water and drying hands using clean paper or single use cloth toweling or air drying devices. Alcohol-based hand sanitizers may be used in accordance with manufacturer's guidelines when hands are not visibly soiled. For hand washing requirements for food employees, see 410 IAC 7-24.
