Section 17-892.1-37 - Food Preparation Food protection shall be carried out as follows:
(1) Policies and practices shall be developed and carried out in a manner that insures that all food is protected from contamination during storage, preparation, and service; and(2) Food protection policies shall comply with accepted practices of local sanitary codes and shall be adapted to fit the needs of the program except as indicated in these rules.Haw.
