Section 420-3-15-.08 - [Effective 2/14/2025] Quality Standards
(1) All microbiological and chemical analyses of processed crab meat shall be conducted in accordance with approved methods as reported by the Alabama Department of Public Health, Bureau of Clinical Laboratories.
(2)Microbiological Standards:
(a) Fresh or frozen processed crab meat shall not contain more than 3.6 Escherichia coli per gram, and shall not exceed an aerobic plate count of 100,000 per gram as reported by the Alabama Department of Public Health, Bureau of Clinical Laboratories.
(b) Fresh or frozen crab meat containing any amount of Listeria monocytogenes shall be deemed adulterated and shall not be used for human consumption.
