Section R432-750-31 - Nutrition and Menu Planning(1) The licensee shall provide at least three meals or their equivalent daily.(2) Meals shall be served with no more than a 14-hour interval between the evening meal and breakfast, unless a substantial snack is available in the evening.(3) The licensee shall have between meal snacks of nourishing quality available on a 24-hour basis.(4) A different menu shall be planned for and available for each day of the week.(5) The licensee shall ensure that patients' favorite foods are included in their diets when possible.(6) The licensee shall maintain at least a one-week supply of non-perishable food and a three-day supply of perishable food.(7) The licensee shall ensure that any food is nutritious, of good quality and appealing to the patient.Utah Admin.
